Miso Soup

Ingredients

  • 4 cups vegetable broth
  • wakame dried nori
  • 3-4 Tbsp miso paste
  • 1/2 cup chopped green onion
  • 1/4 cup silken tofu

  • Serves: 2

Directions

  1. bring vegetable broth to a simmer in a medium sauce pan
  2. add nori and simmer 5-7 minutes
  3. while nori simmers, add miso paste to a small bowl and whisk with a little hot water until smooth
  4. add green onion and tofu to pot and cook for 5 minutes
  5. remove from heat and add miso mixture and add salt to taste
