Ingredients

  • 1.5lbs boneless chicken thighs (cut 2“ pieces)
  • 2 Tbsp potato starch
  • 2 Tbsp all-purpose flour
  • 1/2 tsp grated ginger
  • 1 clove garlic (minced)
  • 1/2 Tbsp soy sauce
  • 1/2 Tbsp dry sake
  • 1/2 tsp sesame oil

Directions

  1. Combine ginger, garlic, soy sauce, sake, sesame oil in a bowl
  2. Add chicken, mix, cover and marinate at least 30 minutes
  3. Prepare potato starch and flour on a plate in separate piles
  4. dredge each chicken piece in flour then potato starch
  5. deep fry each piece at 325°F (163°C) for 90 seconds (don't do too many pieces at once to maintain temperature)
  6. deep fry each piece again at 350°F (177°C) for 45 seconds
  7. Serve with a lemon slice and japanese mayo
