Hong Shao Rou

Ingredients

  • 1 lb pork belly (1/2“ pieces)
  • 2 slices leek (big)
  • 2 slices ginger (big)
  • 1 star anise
  • 1 Tbsp soy sauce
  • 4 Tbsp sugar
  • 1.5 cup shaoxing wine
  • 1/3 cup water
  • five spice powder
  • white pepper
  • salt

Directions

  1. Heat oil in pan over medium heat
  2. Add sugar, once starts to melt, add 1/3 cup boiling water and stir to make a syrup
  3. Remove syrup from pan and set aside
  4. Add oil to pan over medium heat and brown pork belly
  5. Set pork belly aside
  6. Add oil to pot over medium heat and cook ginger, leek, and star anise until fragrant
  7. Lower heat to low and add soy sauce, pork belly, shaoxing wine, and syrup
  8. Add salt, white pepper, and five spice powder to taste
  9. Add wine and water as necessary to cover the pork belly
  10. Cover and simmer on low for 1 hour
  11. Remove lid, raise heat to medium, and stir while thickening and reducing sauce
  12. Serve over rice
